or
2) a moderate-to-high risk of asthema

You mean "asthma". No hyphens are needed. I hate hyphens. They're ugly. The only uglier punctuation is parentheses.

I'm not a native English speaker, but I am student of Master of Electrical Engineering and have published academical paper before. I would say it depends on the state of your text. However I wouldn't use the second one "moderate-to-high", because it is not a very common phrase in my field.
