Should I use "of" here?
- I drink some coffee every day.
- A lot (of) actually.
Why?

You would just say: A lot, actually. The "of coffee" is understood, given the first sentence. However, you do not use the "of" unless you also tell us what is being referred to ("of" what?).

I had a ton of dirt delivered to my house.

A pile of rocks covered my sidewalk.

A lot of trees are in the park.

None of these sentences would make sense
