A liquid or liquid; a fruit or fruit

Hi. Which is correct? If I am not mistaken, I think when you put the indefinite article "a" in front of words like "liquid" and "fruit," you are making the words into types.

Milk is a liquid/liquid that usually (mostly?) comes from a cow and ...

An apple is a fruit/fruit that is mostly red in color and ...
