A curious pronunciation spelling.

A recent article in the Minneapolis Star Tribune contained a curious pronunciation spelling an attempt to represent a pronunciation using ordinary English letters:

the author discusses the change of decor, menu, and name for the Pickled Parrot restaurants, which will take the name Bilimbi Bay. What pronunciation do you think the pronunciation spelling in the following is supposed to represent: "All three Pickled Parrots in Apple Valley, Eden Prairie and Uptown Minneapolis should go Bilimbi (pronounced baa-limb-bee) by mid-March."

The OED gives /bI'lImbI/ (notice the reference to pickle in the 1772-84 citation): [nq:2]bilimbi(bI"lImbI) Also 8 blimbi, 9 bilimby, blimbing.
