A copy of/ copies of ??

hi,

could anyone help wtih "a copy of / copies of" ?

i understand that when i am saying

1 copy of single documet, then i will use "a copy of "document"

2 copies of single document , then i will use 2 "copies of "document"

what if i want to say

1 copy of diff documents, then what should say a copy of documents or copies of document (e.g. a copy of their passports or copies of their passports)

and are there any situations where "copies of" would be appliciable?
