Could you tell me how you would phrase these if they are not natural please?

My guess is that "you do" = 'you care' here.

"do" is an auxiliary verb used for emphasis when the main verb is explicit.
The main verb (care) can be omitted because it is the same as in the previous (dependent) clause.

A tag question is different.
