Actually in this case, I think that most Americans would use the "and", even if they had a habit of usually omitting it.

I'd say "one hundred fifty-six centimeters".
I don't know if reading it as "one fifty-six" is common when numbers are followed by units of measurement. However, without units, you can read 156 as "one fifty-six", if you want to read it the fast way.
