12 pm and 12 am

I understand 12 pm and 12 am are a bit confusing because 12 am comes after 11pm and 12 am comes after 11 pm.

I often see 12 noon and 12 midnight to avoid the confusion.
Could you please tell me if they are grammatically correct?

Or would you write12 pm noon and 12 am midnight for descriptions in a restaurant website instead?

May I ask you further questions?
Is midnight always twelve o'clock at night?
Can it be around 1 o'clock at night for example?

You can say midnight is 12 at night. It cannot be 1 o'clock at night.

I'm a native English speaker in the US and I did not get these straight until I was over 40 years old. Midnight is 12 AM, noon is 12 PM.
