If you ask me, 'Hello, how are you? Are you in a good health?', could I reply, ' I am fine. Thanks for asking after me.'? Could I ask after you while talking to you or is it always about a third person?

Are you in good health? is formal. Informal is

eg Are you keeping well?

eg Are you doing OK?

I suppose you can think of it as a rule of English grammar. Other examples would also be non-countable nouns. You can't say any of the following:

a good equipment; a good furniture; a good information
