Hello Sirs.
I have a question about "Would" and when l should use it.
On the sentence below why I should use "Would".
I think it's better to use "Can" !!!
"Obsidian knives will cut between cells rather than tear the cells as steel knives would do"

It is the conditional structure, similar in meaning to these:

If you used a steel knife, you would tear the cells because steel knives tear cells. They cannot cut between cells.
If you used an obsidian knife, you would cut between cells.
