It would be helpful to know what kind of letter you need? What is the purpose of the letter? Who will receive it? Generally speaking, a "friendly" letter should look something like this:

Dear Paul,

It was so great meeting you for lunch the other day. We needed some time
together to catch up on everything. I was so thrilled to hear that you were
accepted at Stanford University. I know you are going to have a wonderful
experience there.
We had so much to discuss, I know we didn't cover everything. I still have to
give you all the details of my trip to Italy. I wish you could have come with
us. It was an amazing experience.
How is your sister doing? I hope she is recovering quickly. It is so stressful to
have someone in the hospital. Please tell her I wish her a speedy recovery and I will
visit her when she is ready to receive visitors.
What I really want to do is get together with you at a practice room so we can
"jam" together like we used to when we had more time in our schedules. Those
were some of the best times we had.
I hope to hear from you soon. I may be returning to California in the summer.
It would be super to get together with you again.
