What is the correct way to say it:
I hope this day finds you well? or I hope today finds you well?

Yes, something like that. I must tell you, however. that I never use such a phrase. If I do inquire, I write/say 'How are you?' or 'How are you doing today?'

Note that these phrases are more suitable for personal letters than for business ones..
