What is the difference between
1.I did that.
2.I must have done that.
Does 2) imply I am not 100% sure?

Correct. Here is a context:

My keys are lying on the kitchen floor.
I can't remember dropping them, but I must have done that because, there they are.

And, as you get older, you will find yourself saying "I must have .." more and more.
