"I hope we will meet next week".
"I expect we will meet next week."
Are both these sentences correct?

Alright, but 'I hope' sounds like 'I am not very certain' and 'we will meet' sounds certain.

"I hope we will meet next week".
"I expect we will meet next week."


Of course "We will meet next week." is the most positive of the three statements.

To my ear, "I hope" and "I expect" are a tie, as far as which is the more positive.
(True, they don't quite mean the same thing.)
