Why can we say 'Lets talk music (politics, art, etc)', but we can't say 'Lets talk it' ? A pronoun (in this case, 'it') can replace a noun if the noun is already known, correct? For example, 'I like music, lets talk it'. Why does 'it' require a preposition?

Anonymous Why does 'it' require a preposition? Because it is not accepted in the idiom, which takes only a noun topic. Note the difference between these: Let's talk about music.
