If I'm talking about a past situation I just thought of now(a day after), can I say:

I can't believe your colleague finished a whole carton of ice cream in five minutes! (happened yesterday)

Or should it be:

I couldn't believe your colleague finished a whole carton of ice cream in just five minutes. (happened yesterday)

Please help. Thanks.
